Dairy Intolerance
Are you one of the many thousands of Australians who suffer from a dairy intolerance?
Dairy is a common allergen but many people are unaware of it. A dairy allergy can present in a variety of ways from severe to mild and when left untreated over a long period of time can really affect someone’s quality of life as well as their intestinal health.
I remember a few years ago both my husband Bill and myself went on a 10-day detox diet. It had no animal products and was quite strict but during this time, we noticed how well my husband felt. For someone who constantly battled headaches and migraines, he went totally pain free. After the 10-day detox, he ate a large serve of baked custard and quickly felt tired, headachy and began breaking wind like you couldn’t imagine. Further tests proved that yes, he was not good with dairy and so to this day he only has it on rare occasions and yes, he is still headache and migraine free.
Some of the symptoms of a dairy allergy or intolerance may include eczema, dermatitis, itchiness, scalp dryness, hay fever, persistent nasal congestion, cough, wheezing, tightness of chest, bloating, gas, vomiting, constipation or diarrhoea, irritability, tiredness and aggression. People can be allergic to dairy products or they can simply have what’s called a cow’s milk protein intolerance or be lactose intolerant and some people are both. A cow has three stomachs to digest the milk and we only have one. It is no wonder that some of us have trouble digesting dairy products.
People with a dairy allergy or intolerance are carrying excess fluid because their bodies are trying to water down the allergens by retaining the fluid as a natural defence. Often when the allergen is removed the fluid vanishes leaving a less puffy looking figure. Some alternates are soy, oat or rice products. Luckily there are some great lactose free products available now so check out your supermarket health section.
I use evaporated milk in many of my recipes, which would not be ideal for anyone with a dairy intolerance, my suggestion is to replace with milk that you can tolerate but use the low fat versions. One cup of evaporated light milk is 4g of fat so match it with this. You may find the sauce won’t be as creamy but if you can’t have the canned milk then you don’t have any other option. You may also find that the recipe may require a little more corn flour to thicken the sauce.
