Gluten Free Chocolate Mousse Pie

Serves: 12
 

Base Ingredients
1 cup almonds
1 cup desiccated (fine) coconut
1 cup pitted and soaked dates
 

Method
 

  1. Process the almonds and coconut to a fine powder with still a little crunch
  2. Add dates and process until the mixture comes together
  3. Press mixture into the base and sides of a 20cm (8in) round flan dish
  4. Place in fridge while making filling

 

Mousse Filling Ingredients
3 avocadoes
1/3 cup agave
½ cup cacao powder
2/3 cup coconut oil
1 cup pitted and soaked dates
½ cup water

 

Method
 

  1. Process the avocadoes, agave, dates and water to a smooth mousse
  2. Add the cacao powder and process to combine
  3. Add the coconut oil and process to combine
  4. Pour the mousse filling over the pie base and place in fridge to set
  5. Decorate and serve
